POTATO-JEL NATURAL is an instant (= cold water swelling) modified potato starch. It features as a natural rheology modifier and thickener according to COSMOS-standard. It provides good transparency and can also be used for jelly textures.

It is recommended to make a pre-dispersion of POTATO-JEL NATURAL in oil or glycerin. If feasible. In water, intensive stirring is required to disperse the product without lumping.
